This egg free mayonnaise substitute happened by accident one day while I was scouring the fridge trying to make lunch in a hurry. I was hungry for chicken salad and didn’t know what to use instead of mayonnaise. I spied the avocados I had been planning to make guacamole with. I figured if we liked guacamole and chicken salad we would like them together and the idea was born! I like a little dry mustard and paprika in my mayo and but if you don’t like it that way, blend up the avocado with lemon juice and salt to give it a simpler flavor. If you want a little southwest flavor, add in some cumin.
- 3 or 4 large, soft avocados
- juice of 1 lemon, or more if needed
- 1/4 tsp. paprika
- 1/4 tsp. dry mustard
- 1 tsp. salt, or to taste
Remove seeds and peels from avocados. Blend all ingredients in blender, adding lemon juice as needed till smooth and with a mayonnaise like texture.
Option: Add 1/2 tsp. ground cumin if you want to use this in a Mexican style recipe or chicken salad, etc.
